Even if you are trying to stay away from carbs, let's be real... we all need one every now and again.

America’s Test Kitchen was voted as having an easy way to achieve this, and here it is:

The oven should be preheated to 450 degrees.

Poke each potato about 6 times and toss the potatoes for a few minutes in a heavily salted bowl of water.

Then place them on a baking sheet and into the oven.

After 45 minutes check with an instant read thermometer to see if the center reads 205 degrees (who ever thought about checking the internal temp?!?).

At that point brush the potatoes with your favorite oil (no need to use expensive olive oil, canola is fine) and place back in the oven for 10 minutes.

This will give you perfectly fluffy insides and crispy skins. YUMMMMMM... Enjoy!
